Before being a Lyon stopper, Le Sully was “Les Oliviers” for 14 years: Olivier Canal’s “bistro” with a Marseille accent. Long before it was the very first stronghold of Mathieu Viannay. It is here that the head of Mother Brazier came to settle when he arrived in Lyon in 1998. Today taken over by Julien Gautier, chef and owner of the neighboring restaurant M Restaurant, and by Emmanuel Tachon-Foley, his dining room manager, Bouchon Sully is inventing a new story.
